Key Lime Mini Indulgence

Ingredients:

  • 4 egg yolks
  • One 14 oz can of sweetened condensed milk
  • 5 oz fresh lime juice
  • Zest of one lime
  • 1 ½ cups graham cracker crumbs
  • Whipped cream to taste
  • Lime wedges

Directions:

  1. Preheat the oven to 350° and whisk egg yolks and sweetened condensed milk in a medium bowl.
  2. Whisk in fresh lime juice and grated lime zest; pour the mixture into a glass pie dish.
  3. Bake for 13 minutes, then cool on a wire rack before refrigerating.

To assemble, fill the bottom of a shot glass or cordial glass with graham cracker crumbs, and place key lime filling in a pastry bag. Pipe filling over crumbs, alternating layers until the glass is filled. Garnish with whipped cream and a lime wedge, and serve.
